Ingredients
  1. 1 pound 99% lean ground turkey
  2. 2 tablespoons oil
  3. 1 large onion, diced
  4. 4 large carrots, peeled and grated (or 2 cups shredded carrots)
  5. 1 medium zucchini, shredded (use a cheese grater)
  6. 2-4 large cloves garlic, minced (use a garlic press)
  7. 2-4 TBS of chili/taco seasoning and salt and pepper to taste *see homemade chili seasoning recipe
  8. 1 (10 oz box) frozen spinach, defrosted and pressed or liquid
  9. 28 oz can crushed tomato
  10. 15 oz can diced tomatoes with green chilies (or just regular petite diced tomato)
  11. *(other veggies- peppers, jalapeno)
Instructions
  1. In a large pot, add 1-2 TBS oil and brown meat. Cook over medium heat until meat is thoroughly cooked and browned. Drain off excess fat/liquid.
  2. Add onions and carrots to the pot and cook over medium high heat, about 5-7 minutes. Add shredded zucchini, garlic and chili seasoning and cook for 2 minutes making sure you stir everything well and garlic becomes fragrant.
  3. Add spinach, crushed tomatoes, diced tomatoes and stir well. Add small water if needed to get the consistency you prefer. Bring everything to a boil, stirring frequently, reduce heat and simmer for 20 to 30 minutes. Add Salt and pepper to taste.
  4. Divide into individual containers or Ziploc bags and refrigerate or freeze.
Notes
  1. If you like a saucier chili, add another can of crushed tomato or tomato puree. For spice, add a jalapeno or crushed red pepper flakes to taste. You can also add additional taco seasoning as needed.
