This is an awesome alternative to pizza, yes I said awesome! Not only is it a healthier option to traditional pizza but it is so delicious!!! It makes a great weeknight dinner or a fun appetizer for your next party.  It is a little time consuming but well worth it!!! You can  prep the cauliflower ahead of time and even pre-bake them as breadsticks or pizza.  If you make-ahead all you will have to do is pop it in the oven for about 5 minutes or so to heat it up and “re-crisp” the bottom.  There is cheese in the crust as a binder so you can either skip the cheese on top to keep it on the lighter side (as seen below) or add a sprinkle to  the top just before baking.

Cut 1 head of cauliflower into smaller pieces and place in a food processor. Pulse until cauliflower resembles crumbles. You can also use a cheese grater for this but it takes more time.

Place in a microwave safe bowl, cover with saran wrap and cook on high for 6 minutes to "cook" the cauliflower.

Cauliflower Crust Pizza

Ingredients
  1. 1 small head cauliflower, chopped into small pieces
  2. 1 eggs, lightly whisked
  3. 1 cup shredded (not grated) parmesan cheese, or other low moisture cheese (cheddar, mozzarella)
  4. 2-4 TBS chopped fresh herbs like parsley, basil, oregano
  5. 1/2 tsp salt
  6. 1/4 teaspoon pepper
  7. 1/4 teaspoon of red pepper flakes (optional)
  8. Breadsticks- need an additional 1/2 cup - 1 cup of shredded melting cheese for the top (cheddar, mozzarella)
  9. Pizza- favorite sauce and toppings
Instructions
  1. Preheat oven to 425F and line a large baking sheet with parchment paper.
  2. Wash the cauliflower then chop into small florets. Using some of the stem is fine. Place in a food processor (you may have to do this in two batches) and pulse until it looks like cauliflower couscous.
  3. Place in a large microwave safe bowl and cover. Microwave on high about 5 minutes. Place the cauliflower into a large dish cloth and let cool. Once cool enough to handle, wrap it up in the dish cloth and wring out as much liquid as humanly possible. THIS IS A KEY STEP for a proper crust.
  4. Place cauliflower back into the large bowl, add eggs, cheese, herbs, salt, and pepper. Get right in there with your hands and mix all of the ingredients together.
  5. Pour the cauliflower mixture onto the parchment lined baking sheet (no greasing necessary, parchment is a wonderful thing) and use your hand to press it down into a large rectangle, about 1/4 inch thickness.
  6. Bake about 8 minutes on the top rack until the top of the crust is starting to turn golden. Then switch the baking sheet to the bottom rack for another 8-10 minutes until crust is golden on the top and bottom.
  7. Breadsticks- Sprinkle about 1/2-1 cup of cheese on the top of the crust and bake about 5 minutes until the cheese melts and is golden. Let cool slightly, slice and serve warm.
  8. Pizza- Add sauce and any other toppings your heart desires (any proteins should be pre cooked before adding) and bake about 5-7 minutes. Slice and serve warm.
Notes
  1. If you are serving a crowd, 1 medium head or two smaller heads of cauliflower will yield 2 large sheet pans.
